Hope everyone is enjoying the weekend! I know it is a cold one around here! Last week I made up another of our favorite recipes, chicken fried quinoa which is a spin off of chicken fried rice. I was introduced to quinoa a few years back and have been hooked ever since! We love this recipe because it is super tasty and provides plenty of leftovers!
- 1 1/2 cups quinoa
- 1 lb chicken breast
- 1 bad steamable mixed veggies
- 4-5 eggs (depends on your preference)
- Soy sauce
- Red pepper flakes
- Garlic powder
I always start by cooking the quinoa because it takes the longest of everything (15 minutes). Make sure to use a large pot because this is where everything gets dumped at the end! Once that is on the stove, I cut the chicken and place it in a pan to cook as well. I season the chicken with soy sauce, red pepper flakes, and garlic powder. If you do not like spice as much, just leave out the flakes 🙂
While the chicken and quinoa continue to cook, I put the frozen veggies in the microwave for 5 minutes. Next, I scramble up the eggs, cook them, and add them to the chicken once it is fully cooked. After the quinoa is done, I add the veggies, chicken, and eggs into the pot with the quinoa and simmer on low. I also add some more soy sauce and garlic powder! Let it sit there for a few minutes and then it is ready 🙂
Chicken fried quinoa is an easy meal to prepare but uses many pans to get there! But it is well worth it in my opinion!
