Turkey Sloppy Joes

Happy weekend, everyone! It’s been another long week but now it’s time to relax and enjoy this beautiful weather we are supposed to have this weekend πŸ™‚

Last Sunday, I tried out a new recipe for dinner and it was a huge success! I couldn’t tell you the last time I had a sloppy joe – maybe high school lunches haha?

Anyway, I was totally craving a sloppy joe and thought, why not try to make some with ground turkey? Totally delicious!

I found a recipe on the Ambitious Kitchen blog and tweaked it to my liking πŸ™‚

Ingredients for turkey sloppy joes:

  • 1 lb ground turkey
  • 1 red pepper, diced
  • 1 cup chopped carrots
  • 8 oz tomato sauce
  • 1/2 cup barbecue sauce
  • 3 tablespoons tomato paste
  • 2 teaspoons chili powder
  • Garlic powder to taste
  • Black pepper to taste
  • Red pepper flakes, if desired
  • Shredded cheese to add to the top, if desired
  • 6 whole wheat hamburger buns

First, I chopped up the red pepper and some carrots into small pieces. Place them in a large skillet on the stove top to start cooking. Add the ground turkey and cook until the turkey is browned or until the pink in gone. While it is cooking, add the chili powder, garlic powder, black pepper, and red pepper flakes.


Now it is time to add in the tomato sauce, paste, and barbecue sauce. Reduce the heat to medium low and let the whole thing simmer for 10-15 minutes, stirring occasionally. You can taste and adjust seasonings as desired.


Serve up the sloppy joe goodness onto some buns, top with some cheese if you wish, and you’re done! Hope you enjoy!



Easy Baked Chicken Nuggets

Hope everyone had a great weekend! The weather here was absolutely gorgeous, so we definitely took full advantage of it πŸ™‚

Earlier last week, I tried out a new recipe from the Whole New Mom blog. This recipe is for homemade chicken nuggets and it turned out to be extremely easy and pretty delicious!

Ingredients needed:

  • 1 lb boneless, skinless chicken breast
  • 1/4 cup whole wheat flour
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Red pepper flakes and black pepper to taste (optional)

Preheat your oven to 450 degrees.

Start by cutting the chicken breast into small pieces (not so tiny that they get to be extra crispy but a little smaller than a normal chicken nugget). Place the cut chicken into a bowl and set aside.

In a separate bowl, mix together the flour, seasonings, and oil.


Pour the dry mixture on top of the chicken and stir lightly with your hands so that the chicken in evenly coated. Then place the pieces of coated chicken onto a baking pan and place in the oven.


Bake the chicken nuggets at 450 degrees for 12-14 minutes or until they reach 180 degrees. Let them cool a few minutes before serving with your favorite dipping sauce!

An easy and healthy alternative to the store bought chicken nuggets that are sure to win over your family!

Blueberry Banana Oat Muffins

I hope everyone had a great weekend! I decided to make my hubby some homemade muffins yesterday for Valentine’s Day and after a little research I decided to try my hand at blueberry banana oat muffins. I kind of just threw this recipe together from scratch but the hubby approved so I will take that as a win πŸ™‚

I did not use any sugar but substituted for honey instead and used applesauce instead of butter. I also used whole wheat flour to make them even healthier!

Ingredients I used:

  • 1 banana
  • 1 cup blueberries (frozen is fine!)
  • 1/2 cup oats
  • 1 egg
  • 1/3 cup honey
  • 3/4 cup milk
  • 1 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 2 oz applesauce

First, preheat your oven to 400 degree. Use a fork to mash up the banana in a medium size bowl. Add the milk, vanilla, honey, and egg. Stir until combined. Next, mix in the flour and baking powder. Fold in the oats and blueberries last.


Grease your muffin pan and fill with batter. I used a scoop to make for an easy and clean process!


Place the muffins in the oven for about 17-19 minutes or until a toothpick inserted in the muffin comes out clean.

You can even place the muffins in the freezer and take them out throughout the week for a quick and delicious breakfast or snack πŸ™‚



Valentine’s Day Craft

Happy Friday, everyone!

Man, has it been a crazy week for us! I am more than ready to rest and have a relaxing weekend πŸ™‚

With Valentine’s Day this weekend, I of course had to do some crafts with my nanny kiddo! She had a blast with this simple, yet fun project!

The supplies needed for this craft include: glue, scissors, and construction paper. Depending how old the child is, you can allow them to cut various colors of paper into small squares.

After all the pieces were cut, I made an outline of a heart on a whole piece of paper. Then you are ready to start glueing!


I went ahead and put some glue on the paper and then had the child pick the pieces and place them on the paper. Keep doing this until they are satisfied with their project πŸ™‚

Once it dried, I wrote the saying πŸ™‚

And that’s all there is to it! Simple project that will keep your child busy for twenty minutes or more πŸ™‚


Whole Wheat Waffles

We made one of our favorite breakfast recipes the other night – whole wheat waffles! Β This is a super easy recipe the makes fantastic and fluffy waffles πŸ™‚ And you can hardly tell that they are made with whole wheat flour!


  • 3 cups whole wheat flour
  • 4 teaspoons baking powder
  • 4 tablespoons sugar
  • 2 large eggs
  • 3 cups skim milk
  • 3 oz applesauce

The first think I do is turn on the waffle makers so it can warm up while I make the batter. Then just mix up all the ingredients and let it sit for a couple minutes. Spray your waffle iron before you put about 3/4-1 cup batter in.


Cook the waffle until it is golden brown. This recipe will make about 5-6 waffles. Top them with whatever you prefer! We aren’t fans of syrup so we choose to top them with peanut butter, jelly, or honey πŸ™‚
