Happy weekend, everyone! It’s been another long week but now it’s time to relax and enjoy this beautiful weather we are supposed to have this weekend ๐
Last Sunday, I tried out a new recipe for dinner and it was a huge success! I couldn’t tell you the last time I had a sloppy joe – maybe high school lunches haha?
Anyway, I was totally craving a sloppy joe and thought, why not try to make some with ground turkey? Totally delicious!
I found a recipe on the Ambitious Kitchen blog and tweaked it to my liking ๐
Ingredients for turkey sloppy joes:
- 1 lb ground turkey
- 1 red pepper, diced
- 1 cup chopped carrots
- 8 oz tomato sauce
- 1/2 cup barbecue sauce
- 3 tablespoons tomato paste
- 2 teaspoons chili powder
- Garlic powder to taste
- Black pepper to taste
- Red pepper flakes, if desired
- Shredded cheese to add to the top, if desired
- 6 whole wheat hamburger buns
First, I chopped up the red pepper and some carrots into small pieces. Place them in a large skillet on the stove top to start cooking. Add the ground turkey and cook until the turkey is browned or until the pink in gone. While it is cooking, add the chili powder, garlic powder, black pepper, and red pepper flakes.
Now it is time to add in the tomato sauce, paste, and barbecue sauce. Reduce the heat to medium low and let the whole thing simmer for 10-15 minutes, stirring occasionally. You can taste and adjust seasonings as desired.
Serve up the sloppy joe goodness onto some buns, top with some cheese if you wish, and you’re done! Hope you enjoy!
