Cheesy Pizza w/ Cauliflower Crust

Hello everyone and happy Friday! Time to sit back, relax, and enjoy the weekend ๐Ÿ™‚

Earlier this week, I tried my hand at something new – using cauliflower as a pizza crust! I will be honest, I was a little nervous about this one because I’m not a huge cauliflower fan but it actually wasn’t all that bad. The husband loved it and I was surprised by how it didn’t taste too much like cauliflower ๐Ÿ™‚ I found this recipe on the Slow Cooker Gourmet blog.

This is also a crock pot recipe so it was super easy once you had the cauliflower ground up!

Ingredients for crust:

  • 1 16 oz bag frozen cauliflower (thawed)
  • 1/2 cup shredded cheese
  • 2 eggs
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

Ingredients for toppings:

  • 1/2 jar Alfredo sauce
  • ย 1 1/2 cups shredded cheese

First, you need to use a food processor to ground up the cauliflower into rice-size pieces.

Then, combine all of the ingredients for the crust in a large glass bowl (eggs, cheese, cauliflower, and seasonings).

Grease the bottom and sides of you slow cooker, then spread the crust mixture evenly along the bottom and sides. Next, add 1/2 jar of Alfredo sauce onto of the crust. Top with cheese.

Turn your slow cooker on high and cook for about 2-3 hours. Prop the lid of the slow cooker open with the end of a wooden spoon. The edges of the pizza will get a little brown. After the pizza is cooked, turn the slow cooker off and let it sit for 30 minutes before you cut it.
