Happy Tuesday, everyone! Today I wanted to share a recipe my husband and I put together Sunday night and it was absolutely delicious! We decided just to use ingredients we already had at home and came up with what we like to call and easy shrimp Alfredo stir fry 🙂
- 2 cups frozen (precooked) shrimp
- 1 cup broccoli, chopped
- 2/3 box bowtie, vegtable pasta (any type of pasta will work)
- 1/2 red onion
- 1/2 jar of Alfredo sauce
- 1 tablespoon olive oil
- Garlic powder, to taste
- Black pepper, to taste
Start by boiling some water in a pot and cooking the pasta noodles according the the directions on the box. While the noodles are cooking, sauté up your chopped broccoli and onion in a separate pan. I also added some black pepper and garlic powder on top of the veggies while they cooked. The veggies will take about 10 minutes to cook.
Once your pasta is close to being done, heat up the olive oil in a separate pan. Then place the shrimp into the pan and season with garlic powder and black pepper. Cook the shrimp for a few minutes on each side then drain the excess oil from the pan.
Add the drained noodles and veggies to the shrimp pan and place on stove top on low setting. Pour the Alfredo sauce in and mix together. Allow for the mixture to simmer for a few minutes.
Dish up your creation and enjoy! I love this recipe because it is such a colorful entree with all the different types of veggies! We will definitely be making this delicious dish again very soon 🙂
