Hello everyone! I know it’s been awhile since I posted last but things have just been busy around here lately!
Last week, we tried out something new for supper. I decided to try to make some BBQ chicken with fresh green beans and red onions and it turned out pretty tasty!
This recipe was also super easy and I’ll definitely be making it again this summer 🙂
- 2 chicken breasts
- 2 cups fresh green bean
- 1 red onion, sliced
- BBQ sauce
- Black pepper to taste
I simply laid the red onion in a greased pan. Added the chicken on top on the onion. Topped the chicken with BBQ sauce. And last, I added the green beans to the other half of the pan! Super easy, right?!
Place it in the oven at 375 degrees for 25-30 minutes, or until the chicken is 170 degrees and golden brown on the outside. Then you are ready to feast!
This afternoon I wanted to share a recipe I tried last week that turned out to be delicious! I was looking for something to make for supper that included broccoli because my husband made a Costco run on his own and came back with a three pound bag of broccoli! I then decided to give this casserole dish a try 🙂
- 1 small onion, chopped
- 2 chicken breasts, cut into cubes
- 4 cloves garlic, minced
- 3/4 cup quinoa
- 1 can (10 oz) cream of chicken soup
- 2 cups chicken broth
- 2 cups broccoli florets
- 1 cup cheddar cheese
- black pepper to taste
I like this recipe because everything is cooked in one pan and clean up time is very minimal! Start by heating some oil in a big skillet. Add the chopped onion, garlic, and chicken. Cook on medium heat for a few minutes until the chicken starts to brown a bit.
Add the quinoa, chicken broth, and cream of chicken soup. Cook (covered) over medium heat until the quinoa is fully cooked (about 15 minutes).
Then add half of the cheese and the broccoli to the casserole. Continue cooking for 2-3 minutes to allow for the broccoli to soften. Sprinkle on the remaining cheese and you’re done 🙂
Hello everyone! Today I wanted to share another new recipe I tried out the other day at work. Here you go, Nicole 🙂 This recipe uses the mini brownie pan like the mini meatloaf recipe I posted a couple weeks ago. This was a pretty simple recipe that would be great to make up on a busy week night!
- 1/2 box of whole wheat spaghetti noodles
- 1/2 jar pasta sauce
- 1/2 red onion, diced
- 1/2 green pepper, diced
- 1/2 cup mushroom, diced
- shredded cheese to top
First step is to cook the noodles according to the package. Then, combine all of the ingredients into a large bowl. Grease your mini brownie pan and fill them with the spaghetti mixture. Sprinkle some cheese on top and place them into the oven at 350 degrees. Let them bake for 20-25 minutes.
Remove them from the oven and let cool for a few minutes. Enjoy!

Today I wanted to share a recipe I made last week at work. It was my first time hearing about a mini brownie pan that Pampered Chef makes and it was absolutely amazing! I immediately starting looking up more recipes on Pinterest that can be tried with this pan 🙂
Ingredients for meatloaf:
- 1/2 lb ground beef and 1/2 lb ground pork
- 3/4 cup red onion, diced
- 1/2 cup celery, diced
- 2 eggs
- 1 cup quick oats
- 1/4 cup soy sauce
- 1/3 cup ketchup
- 1 tablespoon dried oregano
- 1 tablespoon chopped parsley
- 2 teaspoons garlic powder
- dash of black pepper
Ingredients for topping:
- 1/4 cup light brown sugar
- 1/4 cup ketchup
- 3 tablespoons ground mustard
- 1/2 teaspoon pepper
This recipe is super easy! Just mix all of the meatloaf ingredients in a large bowl then place the mixture into the greased mini brownie pan. Fill them so they are almost all the way full.
Then, mix together all of the topping ingredients and brush it on top of each mini meatloaf.
Preheat the oven to 350 degrees and bake the mini meatloaf for about 40-45 minutes or until the inside temperature reaches 160 degrees. These mini meatloaves are just the cutest thing and they are the perfect size for kids or if serving as an appetizer!
