Mini Meatloaf

Good afternoon and happy Friday, everyone!

Today I wanted to share a recipe I made last week at work. It was my first time hearing about a mini brownie pan that Pampered Chef makes and it was absolutely amazing! I immediately starting looking up more recipes on Pinterest that can be tried with this pan ๐Ÿ™‚

Ingredients for meatloaf:

  • 1/2 lb ground beef and 1/2 lb ground pork
  • 3/4 cup red onion, diced
  • 1/2 cup celery, diced
  • 2 eggs
  • 1 cup quick oats
  • 1/4 cup soy sauce
  • 1/3 cup ketchup
  • 1 tablespoon dried oregano
  • 1 tablespoon chopped parsley
  • 2 teaspoons garlic powder
  • dash of black pepper

Ingredients for topping:

  • 1/4 cup light brown sugar
  • 1/4 cup ketchup
  • 3 tablespoons ground mustard
  • 1/2 teaspoonย pepper

This recipe is super easy! Just mix all of the meatloaf ingredients in a large bowl then place the mixture into the greased mini brownie pan. Fill them so they are almost all the way full.

Then, mix together all of the topping ingredients and brush it on top of each mini meatloaf.

Preheat the oven to 350 degrees and bake the mini meatloaf for about 40-45 minutes or until the inside temperature reaches 160 degrees. These mini meatloaves are just the cutest thing and they are the perfect size for kids or if serving as an appetizer!

Crockpot Ranch Chicken

Good afternoon! Today, I wanted to share with you all a recipe I made last week. This is probably one of the easiest, yet delicious recipes I have tried! This crockpot ranch chicken only calls for three ingredients plus water – how much easier can it get?!

Ingredients:

  • 1-1.5 lbs chicken breast
  • 1 packet dry ranch seasoning
  • 1 can cream of chicken
  • 1 soup can filled with water

Place all of the ingredients inside your crockpot. I use a liner to make for easier clean up but it is not needed! Cook all of ingredients on low for 4-6 hours, stirring occasionally. And that’s literally all! I decided to roast some asparagus to serve with the chicken but you can pair it with anything ๐Ÿ™‚

Easy Peanut Butter Cookies

Hope everyone had a great weekend and a happy Mother’s Day to all those mamas out there!

Last week, I was baking at work and decided to try a few new recipes. I found this recipe on JuliasAblum blog and it was amazing! The cookies were gone within 48 hours and I even doubled the recipe! I can almost guarantee I will be making these again soon!

I like this recipe because it is super easy and they are unique because you don’t press them down like a typical peanut butter cookie ๐Ÿ™‚

Ingredients:

  • 1/4 cup peanut butter
  • 3/4 cup all-purpose flour
  • 2 tablespoons butter (room temperature)
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 2 tablespoons sugar for coating

Preheat your oven to 350 degrees. Then, use a mixer together the peanut butter and butter until smooth. Add the brown sugar and beat until combined. Next, mix in the egg and vanilla.

In a separate bowl, whisk together the flour and baking powder. Slowly combine the dry ingredients to the wet ingredients and mix until a smooth dough is formed.

Grease a cookie sheet or line it with parchment paper. Then use your hand to roll small balls of dough. Roll each one in the sugar before placing it on the cookie sheet.

Place the dough balls into the oven and bake for about 12 minutes or until they start to puff up slightly. The cookies should be slightly brown around the edges and begin to crackle on the top. Remove them from the oven and let them cool for 10 minutes before moving them to a wire rack.

Enjoy these wonderful cookies and try not to eat them all the first day!

Cinnamon Sugar Bread

Hope everyone had a great weekend – even if it was a wet one! Today I wanted to share a recipe I tried last week at work. I decided to try to make bread for the first time ever! After searching around I came across a recipe for a cinnamon sugar bread that sounded delicious! This bread recipe did not include yeast, which was what I was looking for since we didn’t have that on hand at work. I found the recipe on the Five Heart Home blog. I would be lying if I said I wasn’t a little intimidated because it was my first time baking bread but I was ready for the challenge ๐Ÿ™‚

I decided to cut the recipe in half, which made one standard-size loaf instead of two.

Ingredients for bread:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 tablespoon cinnamon
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 3/4 tablespoons vanilla extract

Ingredients for topping:

  • 1/4 cup sugar
  • 1 tablespoon cinnamon

First, you will want to preheat your oven to 350 degrees. Grease one full-sized loaf pan with butter and a little sugar around the edges. Next, whisk together the flour, baking powder, baking soda, salt, and cinnamon in a large bowl. In a separate bowl, mix the buttermilk, oil, and sugar. Beat in the eggs and vanilla until well combined. Then, slowly stir the wet ingredients and dry ingredients until just combined.

 

In a small bowl, stir together the sugar and cinnamon for the topping and set aside.

Place half of the batter into the greased bread pan.

Then pour 2/3 of the cinnamon sugar mixture on top. Pour the rest of the batter above the cinnamon sugar. Use a butter knife to swirl through the batter and distribute the cinnamon sugar through the bread. Sprinkle the remaining cinnamon sugar on top.

Place the bread pan on top of a cookie sheet in the oven in case the batter overflows a little. Mine didn’t have this issue but it’s better to be safe and have less of a clean up in case it happens ๐Ÿ™‚

Bake at 350 degrees for about 50-60 minutes. Insert a toothpick into the center of the loaf and once it comes out clean ,the bread is done.

Remove the bread from the oven once it’s done and let it cool in the pan for five minutes before removing it to a wire rack. Run a butter knife around the edges if you need to loosen the bread.

I think my first loaf of bread turned out pretty well and it’s definitely a recipe I will try again ๐Ÿ™‚

Roasted Asparagus

Happy Thursday, everyone! I wanted to share another spring time recipe with you all! One of my favorite vegetables, and one that I only usually get around this time of year, is asparagus. This is a simple recipe that is full of flavor and sure to impress!

Ingredients:

  • 1 bunch of asparagus
  • 3 cloves of garlic, crushed
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Few shakes of Parmesan cheese

Preheat the oven to 425 degrees.

Next, put a layer of aluminum foil over a cookie sheet and spread the asparagus across it. Drizzle the oil oil over the asparagus. Then, sprinkle the crushed garlic, black pepper, and Parmesan cheese on top. Place the cookie sheet into the oven for about 15 minutes and you have yourself some delicious asparagus! Hope you enjoy this dish as much as me ๐Ÿ™‚

Rhubarb Muffins

Good afternoon everyone! Spring time means it’s that time of the year for rhubarb, so today, I am going to share a recipe I made for work that is centered on rhubarb ๐Ÿ™‚

This was actually my first time cooking with rhubarb (I’m not a fan of it so I never had made it before) but everyone said they turned out delicious so I will trust them!

Ingredients for muffins:

  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • dash of salt
  • 1 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup buttermilk
  • 1 1/2 cups chopped rhubarb

Ingredients for topping:

  • 1 tablespoon melted butter
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon

First thing to do is chop up the rhubarb into small pieces. Then, preheat the oven to 350 degrees. Mix the flour, baking soda, baking powder, and salt in a large bowl and set aside. In a separate bowl, mix the brown sugar, vegetable oil, vanilla, egg, and buttermilk together. Fold the wet ingredients with the dry until combined and then add the rhubarb pieces.

Line a muffin pan and scoop the batter into the cups. Fill about 1/2 – 2/3 full with batter.

Mix together the melted butter, sugar, and cinnamon. Drizzle a little onto each muffin and place into the oven.

Bake the muffins at 350 degrees for 25 – 30 minutes. Let them cool for a few minutes then enjoy!

Alfredo Turkey Balls

Hello everyone! I can’t believe it’s been so long since I posted! It’s a bit of a crazy time in our household right now with us both starting new jobs but I promise I will get back on a schedule ๐Ÿ™‚

For my day off earlier this week, I decided I wanted to try out a new recipe – buffalo chicken meatballs. However, this recipe changed once I got to the store and saw how expensive ground chicken was! I then decided I would try the recipe with ground turkey, my usual meat choice. Later that day, I once again changed my mind and decided I would try dipping the turkey balls in Alfredo sauce instead of buffalo because I had some to use up and it sounded delicious. Boy was I right! This turned out to be a fantastic choice ๐Ÿ™‚

Ingredients:

  • 1 lb ground turkey
  • 2/3 cup finely choppedย carrots
  • 2/3 cup finely chopped broccoli
  • 1 egg
  • 1/4 cup bread crumbs
  • 2 cloves crushed garlic
  • black pepper to taste
  • 1/2 jar Alfredo sauce

First step is to preheat your oven to 400 degrees. Then you need to chop up the carrots and broccoli. I used my food processor and it was a breeze! Next, combine all of the ingredients except the Alfredo sauce in a large bowl.

Mix the ingredients by hand until well combined.

Next, I used a cookie scoop to make the balls. Place them on a lined cookie sheet to make for an easier clean up ๐Ÿ™‚

It made about 25 meatballs for me.

Then you need to bake the turkey balls for 18-20 minutes at 400 degrees.

While the turkey balls are in the oven, pour the Alfredo sauce into a medium sized glass bowl and set aside. Take the balls out of the oven and let them cool for a few minutes. Then, place a few balls at a time into the Alfredo sauce and stir them up.

I decided to pair our Alfredo turkey balls with some veggie pasta and sauteed sweet peppers ๐Ÿ™‚
